What most eat... are live corals and the organisms associated with them... principally algae. Here's some evidence of fresh parrot-chewed coral in Cozumel 2012

Penicillus dumetosus, Bristle Ball Brush. Tropical West Atlantic. To six inches in height. Here blown over by current in Cozumel 2012
 
Phorbas amanthus, Red Sieve Encrusting Sponge. Size 6-18 in. Bright red, with surface showing numerous craters (raised circular sieve like areas) and small incurrent pores around protruding excurrent openings. Reacts to touch by closing openings and pores. Cozumel 2012.
 
Porites asteroides Mustard Hill Coral. Form encrusting colonies in shallows to domes in calmer, deeper water. Cozumel 2012
